Abstract
⺠Gemini surfactant can be used as a high efficiency emulsifier to produce gel emulsions. ⺠The viscoelasticity and thermal stability of the gel emulsions increase along with raising the surfactant concentration. ⺠The gel emulsions produced by Gemini surfactant show superior thermal stability compared with gel emulsion produced by the monomeric surfactant.
