Abstract
► New EPR methods offer complementary information on hydrophobic solutes in emulsions. ► Hydrophobic molecules can be effectively encapsulated in liquid oil droplets. ► Aqueous solute concentrations in emulsions is greater than in similar bulk phases. ► The solute reactivity can be controlled via changing droplet size and crystallinity. ► Crystallization of droplets can exclude the solute from the lipid to the droplet surface.
