Abstract
⺠New EPR methods offer complementary information on hydrophobic solutes in emulsions. ⺠Hydrophobic molecules can be effectively encapsulated in liquid oil droplets. ⺠Aqueous solute concentrations in emulsions is greater than in similar bulk phases. ⺠The solute reactivity can be controlled via changing droplet size and crystallinity. ⺠Crystallization of droplets can exclude the solute from the lipid to the droplet surface.
