Abstract
⺠Air blast freezers are employed for rapid freezing of food. ⺠The paper highlights common design flaws, common energy saving measures and a best practice guide of air blast freezers. ⺠A simulation model has been developed to design an optimal air blast freezer and to predict its performance under a range of operating conditions.
