Abstract
⺠Commercial granola was compared with the products produced by wet granulation. ⺠Impeller rotational speed was the most important process parameter. ⺠Nozzle air pressure and binder spray rate affected the granule quality attributes. ⺠Commercial granola showed a large variation in size and textural properties.
