Abstract
												⺠Merluccius hubbsi (Argetinean hake) wastes was fermented with 16 strains lactic acid bacteria. ⺠Three strains were selected according to acidification kinetic, tolerances to heat, acid, and bile salt. ⺠the best performance was reached with Lactobacillus arizonensis.
