Abstract
► Probiotics represent a fast evolving field which has expanded from the traditional health benefit areas of digestive comfort and immune protection to diverse health benefit areas. ► To ensure probiotic viability, selection of intrinsically robust strains, and protection during manufacture and storage are critical. ► Probiotic strain can also exhibit biocatalytic properties that may improve the bioavailability and digestibility of food ingredients.
