Abstract
- We described the biochemical properties of a novel amylase from amylolytic lactic acid bacterium L. plantarum S21.
- Cloning of gene encoding this novel enzyme is also described.
- Broad pH stability of this enzyme is an attractive feature over other ALAB amylases.
- This amylase is maltose-forming α-amylase that is very few reported in ALAB.
