Abstract
												- An enzymatic process for the synthesis of 2-monoolein and 1,2-diolein has been developed.
- Both products have been synthesised in good yields and with excellent regioselectivities.
- R. oryzae lipase was found to be the most suitable biocatalyst for the production of the monoglyceride.
- P. fluorescens lipase showed the best performance for the diglyceride synthesis.
- Response surface analysis was used to optimise both processes.
