Abstract
- Transformation of flavanone, cis- and trans-flavanol in selected yeasts investigated.
- As a biocatalyst we employed the strains which are commonly used in food industry.
- Effective way to enantiospecific reduction of flavanone was found.
- C. parapsilosis was proven to be the catalyst capable to separate (±)-cis-flavan-4-ol.
- Y. lipolytica has effectively and enantioselectively oxidized of (±)-trans-flavan-4-ol.
