Abstract
- Levansucrase (LS)/endo-inulinase bi-enzymatic system was optimized to produce FOSs and oligolevans.
- The new bi-enzymatic system requires low sucrose concentration and short reaction time.
- LS/endo-inulinase ratio exhibited more significant effects on end-product profiles than on yield.
- At the initial stage of the reaction, scFOSs were the major products.
- 6-kestose, mcFOSs and oligolevans were the dominant products at the late reaction stage.
