Abstract

- The microwave-assisted immobilized enzymatic digestion (MAED) was first applied in ginkgo protein.
- Bromelain was first immobilized onto magnetite core and ordered mesoporous silica shell (Fe3O4@mSiO2@nSiO2).
- The MAED of ginkgo with immobilized bromelain (30 min) was faster than in-solution digestion with free bromelain (12 h).
- A homogeneously abundant distribution of peptide fragments was obtained from MAED of ginkgo with immobilized bromelain.
