Abstract
- The conditions for specific and efficient formation of an erythorbic acid glucoside, EA-2G, were established by using commercially available enzymes.
- The specific and efficient production process of EA-2G consisted of two steps: transglycosylation by cyclodextrin glucanotransferase and hydrolysis by amyloglucosidase.
- This method is superior to the previous method in terms of the reaction efficiency in large-scale production.
