Abstract
- Foam films are obtained from β-lactoglobulin solutions with different pH and ionic strength.
- The effect of pH and ionic strength on the film thickness is studied and the action of electrostatic surface forces is revealed.
- The existence of electrostatic barrier in the disjoining pressure isotherms for β-lactoglobulin foam films is demonstrated.
- It is shown that the visco-elastic characteristics of film surfaces significantly affect film drainage and stability.
