Abstract
⺠β-lactoglobulin alone and mixed with varying SDS concentrations are studied. ⺠Adsorption and shear rheology of layers at water/oil interface are determined. ⺠With increasing concentration in mixtures SDS dominates at the interface. ⺠Elasticity of adsorbed layers increases at low SDS concentrations. ⺠Structures formed at water/hexane and water/MCT interface are different.
