Abstract
⺠Rheological behaviour of water-in-oil and oil-in-water emulsions was studied. ⺠The emulsions were stabilized by both solid particles and non-ionic emulsifier. ⺠Dynamic rheological measurements were carried out in linear and non-linear regimes. ⺠The addition of emulsifier improved the stability, however, it did not significantly influence the emulsion flow behaviour. ⺠With addition of emulsifier, the elastic solid-like structure of emulsion can be changed into a viscous liquid-like structure.
