Abstract
⺠Three processes of the HII mesophase are detected using dielectric spectroscopy. ⺠Phosphatidylcholine affects the dynamic and kinetic properties of the HII matrix. ⺠10 wt.% phosphatidylcholine is the optimal concentration for structural stability. ⺠Triacylglycerol percolates and transfers between the HII rods.
