Abstract
- Na-citrate interacted with tyrosine residues to unfold the BSA structure.
- It induced the formation of 12 and 18 BSA aggregates at the gas-liquid interface.
- The enhanced BSA-BSA association improved the stability of BSA foam.
- With 30Â mmol/L Na-citrate, the BSA recovery increased by 4 folds.
