Abstract
⺠TB mainly contains alkaloids, tea pigments, polysaccharides, proteins and lipids. ⺠The raw materials impact the chemical composition of TB. ⺠Black tea is not a suitable raw fermentation material for Pu-erh tea. ⺠CP-Py-GC/MS had effectively identified the TB extracted from different Pu-erh tea.
