Abstract
⺠OFAT tests and RSM analysis based on a BBD were designed perfectly. ⺠FRAP value was used to evaluate antioxidant activity. ⺠PEF technology was applied to improve antioxidant activity of polypeptides. ⺠NIR and MIR were used to analyze the change of functional groups.
