Abstract
⺠Various flavonoid aglycones compete with Ochratoxin A (OTA) to human serum albumin. ⺠Competition is quantified by fluorescence polarization method. ⺠Structure of flavonoids determine their capability to compete with OTA for HSA. ⺠Our data are the first descriptions on competitive action of flavonoids with OTA.
