Abstract
⺠Interaction of BSA with gelatin in coil state leads to collapse gelatin chains. ⺠The collapsed gelatin molecules stabilize BSA against thermo aggregation. ⺠Gelatin in helix state forms a large complex particles with BSA. ⺠Trapping BSA molecules into the meshes of the gelatin network is observed.
