Abstract
⺠Extraction of gelatin from Pacific cod skin was performed under optimal conditions. ⺠The antioxidative effect of fish skin peptides was analyzed by ESR technique. ⺠Intracellular antioxidant activities were investigated on RAW 264.7 cells. ⺠Angiotensin-I converting enzyme inhibitory effect of the purified peptides was assessed. ⺠Purified peptides could be used in the functional foods.
