Abstract
We summarize recent progress in utilizing the spinodal decomposition mechanism to probe the liquid-gas phase transition in nuclear matter, which occurs at subsaturation densities and moderate temperatures, and then discuss the prospects for exploiting this mechanism as a probe of the transition from a quark-gluon plasma to a hadron gas.
