Abstract
⺠Carboxypeptidase I (CP I) was purified from triticale grains. ⺠The enzyme is a serine CP that hydrolyze hydrophobic substrates in low pH. âºÂ Triticale CP I is a homodimer, each subunit is built of 2 polypeptide chains. ⺠The gene encoding triticale CP I is synthesised mainly in scutellum.âºÂ CPs degraded products of preliminary hydrolysis of albumins and globulins by EP8.
