Abstract
This paper provides an overview of the current French market for goat milk cheeses as well as recent data concerning the perception of these products by consumers, whose consumption patterns have changed considerably over the past two decades. It also incorporates the key studies and the recent works in the field of nutritional and sensory quality of French cheeses made from goat milk.
