Effect of convective-, vacuum- and freeze drying on sorption behaviour and bioactive compounds of lemon balm (Melissa officinalis L.)

- Freeze- and convective drying caused minimal essential oil content losses.
- Geranial content was higher after freeze drying and convective drying.
