Abstract

•The amorphous and crystalline fractions in raw corn pericarp were obtained by sequential extraction.•The corn pericarp diffractogram was reconstructed from the recovered fractions.•The crystallinity of corn pericarp during nixtamalization was assessed.•The method could be applied to assess crystallinity evolution in other systems.
