Abstract
►The hysteresis between wheat adsorption and desorption was unaffected by grain hardness. ►There was a big difference in isosteric heats of wheat adsorption and desorption below 20% m.c. ►Hygroscopic properties and sorption isosteric heats were similar for hard and soft wheat varieties. ►There is no need to differentiate between hard and soft wheat during physical control in storage.
