Abstract
⺠Modified atmosphere packaging (MAP) delayed the development of bioactive compounds with antioxidant properties associated with ripening of different plum cultivars. ⺠MAP did not impart any negative effects on total antioxidant activity and reflects the delay of ripening in plums stored under MAP conditions. ⺠Lipophilic antioxidant activity should be taking into account when measuring total activity of plums, since its contribution is similar to that of hydrophilic antioxidant activity.
