Abstract
⺠Pepper Kulai is climacteric fruit with a peak ethylene production. ⺠β-Galactosidase is likely to play a role in cell wall modification during ripening. ⺠Comprehensive study on profile antioxidant during ripening of pepper Kulai. ⺠Oxidative stress increased along the ripening process. ⺠Antioxidant status is elevated at the same time, suggesting a defensive response.
