Abstract
ⶠSeed and juice attributes were used to characterize sour and sweet pomegranate. ⶠMany studied traits allowed differentiation between sour and sweet cultivars. ⶠSourness in pomegranate is determined essentially by the citric acid concentration. ⶠThe sourness index (SI) allowed a clear cutting between sour and sweet pomegranate. ⶠBoth types of pomegranate showed interesting properties for several industrial applications.
