Abstract
▶ Seed and juice attributes were used to characterize sour and sweet pomegranate. ▶ Many studied traits allowed differentiation between sour and sweet cultivars. ▶ Sourness in pomegranate is determined essentially by the citric acid concentration. ▶ The sourness index (SI) allowed a clear cutting between sour and sweet pomegranate. ▶ Both types of pomegranate showed interesting properties for several industrial applications.
