Abstract
â¶ Seed and juice attributes were used to characterize sour and sweet pomegranate. â¶ Many studied traits allowed differentiation between sour and sweet cultivars. â¶ Sourness in pomegranate is determined essentially by the citric acid concentration. â¶ The sourness index (SI) allowed a clear cutting between sour and sweet pomegranate. â¶ Both types of pomegranate showed interesting properties for several industrial applications.
