Abstract
⺠Wheat-contaminated oats reference materials with known gluten contents were created. ⺠Raw and reference materials were characterized physicochemically. ⺠The protocol developed could be used for preparing other reference materials. ⺠Reference materials could be used for allergen testing and analytical research.
