Abstract
⺠Studying of wheat grain development under different controlled temperature regimes. ⺠High temperature negatively impacted grain mass but favored grain vitreousness. ⺠High temperature increased protein concentration and glutenin polymerization. ⺠Grain filling arrest always occurred at 45.9% of grain moisture content. ⺠Protein concentration might control grain drying rate and glutenin polymerization.
