Abstract
► Studying of wheat grain development under different controlled temperature regimes. ► High temperature negatively impacted grain mass but favored grain vitreousness. ► High temperature increased protein concentration and glutenin polymerization. ► Grain filling arrest always occurred at 45.9% of grain moisture content. ► Protein concentration might control grain drying rate and glutenin polymerization.
