Abstract
⺠Properties of whole wheat are modified during extrusion. ⺠Sectional expansion of whole wheat does not depend on extrusion conditions. ⺠Modification of volumetric expansion is linked to changes in longitudinal expansion. ⺠Mechanical properties can be optimized by changing process conditions.
