Abstract
⺠3-Deoxyanthocyanidins were the prominent flavonoids found in black sorghum grains. ⺠3-Deoxyanthocyanidins levels on black sorghums were lower in weathered grains. ⺠Methoxylated forms of 3-deoxyanthocyanidins were more stable to weathering. ⺠Color values L*, a* and b* did not correlatewith flavonoid content.
