► 3-Deoxyanthocyanidins were the prominent flavonoids found in black sorghum grains. ► 3-Deoxyanthocyanidins levels on black sorghums were lower in weathered grains. ► Methoxylated forms of 3-deoxyanthocyanidins were more stable to weathering. ► Color values L*, a* and b* did not correlatewith flavonoid content.
