Abstract
▶ We subjected two tomato varieties to abusive high and low temperatures. ▶ Both chilling and heating tomatoes generally suppressed production of C6 aroma volatiles. ▶ Gene expression and activity for key enzymes in the C6 volatile pathway (LOX, HPL and ADH) were evaluated. ▶ Chilling generally downregulated while heating upregulated key enzyme gene expression. ▶ Chilling and heating increased LOX but decreased HPL and ADH activities. Some recovery occurred after 4 h.
