Abstract
â¶ We subjected two tomato varieties to abusive high and low temperatures. â¶ Both chilling and heating tomatoes generally suppressed production of C6 aroma volatiles. â¶ Gene expression and activity for key enzymes in the C6 volatile pathway (LOX, HPL and ADH) were evaluated. â¶ Chilling generally downregulated while heating upregulated key enzyme gene expression. â¶ Chilling and heating increased LOX but decreased HPL and ADH activities. Some recovery occurred after 4Â h.
