► We review knowledge of the influence of chilling during dormancy. ► Physiological, biochemical and molecular dormancy studies are integrated. ► Low temperature requirements during dormancy and bud breaking are described. ► Climate records show UK winter chill has declined and will continue to decline. ► Mitigation strategies such as the development of novel germplasm are outlined.
