Abstract
⺠Chlorogenic acid is transesterified when extracted from mycorrhizal tomato roots. ⺠This transesterification into methyl caffeate is an enzyme-catalysed reaction. ⺠The enzyme catalysing this reaction is inhibited by phenylmethanesulfonyl fluoride.
