Abstract
- A betanidin glucosyltransferase was purified from Amaranthus tricolor L.
- The enzyme glycosylated betanidin and flavonoids (i.e. kaempferol and quercetin) but not anthocyanidins.
- Peptide mass fingerprinting of the enzyme showed similarity to anthocyanidin 3-O-glucosyltransferase from Zea mays.
