Abstract
⺠We discuss a process known commonly as'3D printing' as applied to complex solid foods. ⺠It involves metering, mixing, deposition and fusion of materials in layers. ⺠A CAD-CAM design interface enables individualised food fabrication. ⺠Food structure, taste, flavour and nutritional content are potentially customisable. ⺠However, highly-standardised formulations need to be designed from the bottom up.
