Abstract
► We discuss a process known commonly as'3D printing' as applied to complex solid foods. ► It involves metering, mixing, deposition and fusion of materials in layers. ► A CAD-CAM design interface enables individualised food fabrication. ► Food structure, taste, flavour and nutritional content are potentially customisable. ► However, highly-standardised formulations need to be designed from the bottom up.
