Abstract
⺠The changes in structure and function of proteins induced by PEF are reviewed. ⺠The structural alterations of proteins in PEF processing are elucidated from primary to quaternary structures. ⺠The structural alterations of proteins in PEF processing are elucidated from unfolding to aggregation. ⺠The molecular mechanisms underlying the action of PEF on protein are proposed.
