Abstract
⺠Novel model mouth design to investigate aroma release during oral processing ⺠Computer controlled artificial tongue capable of mimicking human tongue pressure patterns ⺠The model incorporates oral conditions including temperature, saliva, air flow, etc. ⺠Volatile organic compounds (VOCs) are on-line monitored using PTR-MS. ⺠The tongue material and volume sample were evaluated for their effect on VOC release.
