Abstract
A novel recombination system was designed to control the rheological behaviour during reconstitution of milk powder by separating the mixing, pumping and heating processes. The application of high shear rate of 40,000 s−1 by recirculation through a capillary system suppressed the age thickening of the reconstituted concentrated milk solutions during recombination and allowed a more systematic study of this time dependent rheological system.
