Abstract
► Surimi-like material (SLM) made from the porcine longissimus dorsi muscle can be used as a fat replacer. ► SLM also improves the physicochemical and sensory characteristics of low-fat pork patties. ►These results may be useful for the food industry to develop low-fat meat products.
