Abstract
												⺠Alicyclobacillus endospores are resistant to the low pH of fruit juices and the pasteurisation treatments applied to fruit juice products. ⺠Alicyclobacillus acidoterrestris is the main species responsible for fruit juice product spoilage. ⺠Guaiacol is the predominant metabolite responsible for Alicyclobacillus spoilage.
