Abstract
⺠Y. enterocolitica 4/O:3 can grow well under MA (30% CO2, 70% O2) at 6 °C. ⺠High number of lactic acid bacteria did not inhibit the growth of Y. enterocolitica 4/O:3. ⺠Raw pig head meat should not be stored under MA. ⺠Pig head meat should only be used for heat-treated products.
