Abstract
⺠Growth of Listeria monocytogenes on solid substrates enhances acid tolerance compared to growth in liquid substrates. ⺠Cooked meat product slices enhance resistance to acid compared to slurries and exudates. ⺠Glucose assimilation in a colony may increase acid sensitivity of L. monocytogenes.
