Abstract
⺠Histamine and putrescine were not produced by the tested lactic acid bacteria. ⺠Most (94%) of the tested enterococci produced tyramine. ⺠TLC was confirmed as a reliable method for biogenic amine detection. ⺠Insertion sequences might disrupt tyramine production in enterococci.
