Abstract
⺠Sinigrin became antimicrobial in the presence of Listeria (L.) monocytogenes. ⺠Sinigrin and mustard films reduced L. monocytogenes viability on packed bologna. ⺠Oriental mustard film eliminated L. monocytogeness from bologna at 35 d storage. ⺠Sinigrin and mustard films inhibited LAB growth on bologna stored up to 70 d.
