Abstract
► Phytate present in the cereal-based fermented beverage (togwa) was degraded by yeast phytases. ► Pichia kudriavzevii TY13 and Hanseniaspora guilliermondii TY14 degraded 95% phytate. ► Phytase production in P. kudriavzevii TY13 continued despite increased phosphate concentration.
